Oatmeal Cookies

Our little brother woke up wanting to make cookies.

Our mom searched through to see what we had and came up with the idea of oatmeal cookies.

Here is the recipe we found – http://low-cholesterol.food.com/recipe/vegan-oatmeal-cookies-68430

We didn’t have applesauce but we did have apples.

We didn’t have brown sugar but we did have sugar, a little molasses and honey.

So…. let’s get started!!

First we started out by making our applesauce.

We didn’t want the apples to turn brown so we made orange juice to soak them in.

We forgot to take a picture while peeling and coring the apple

but this is one of our favorite kitchen tools to work with.

Here are the apples all cored, peeled, cut up and soaking in the orange juice

Next we strained the apples and put them in the pan with about a 1/4 cup of orange juice to boil in.

We then used the leftover orange juice to make a smoothie while we waited for the apples to cook.

The apples cooked for approximately 20 to 30 minutes on medium low heat.

We used a potato masher to mash it all up into a chunky applesauce.

The orange juice was a great flavor with the apples.. you could also cook them in water.

We needed 1/2 cup applesauce for the cookies so we set that aside and were able to eat the rest.

Next we needed to make some brown sugar.

We found out you can add 1 1/2 Tbsp. molasses to 1/2 cup sugar.

We only had 1/2 Tbsp. left of molasses so we used honey for the 1 Tbsp.

It worked out really well and tasted great!!

Now that we got our ingredients ready we can start making the cookies!!

1 1/2 bananas mashed up (the more spots they have, the sweeter they taste)

Preheat oven to 350 degrees.

Here we have the following ingredients:

3/4 cups oats (oops 3 cups were in the bowl which we fixed later)

1/2 cup sugar

1 cup flour

1/2 cup applesauce

1  1/2 bananas

dash of salt

dash of nutmeg

cinnamon

2 tsp. vanilla

1  1/2 tsp. baking powder

First we added all of our liquid ingredients and sugar in a bowl and mixed it together.

Applesauce

Mashed Banana

Vanilla

and Brown Sugar

Next we added in all of our dry ingredients and then whisked that together.

Flour

Oats

Baking Powder

Salt

Nutmeg

Cinnamon

Now the dough is ready..

Next we found out we ran out of parchment paper

so we lightly oiled a cookie sheet with coconut oil.

Drop by spoonful onto the cookie sheet and place in the oven

for 20 to 25 minutes or until golden brown.

and there you have it…

Thank you and hope you enjoy!!
